Yummy Rice Salad

This recipe was sent to me by Joyce Jameson in Napier, New Zealand as Yummy Brown Rice Salad, so I think I'll stick with that name.
Place 1 Cup of brown rice in microware container or bowl and 1 1/2 cups of water. Microwave for about 20mins until cooked and no excess liquid.
(Time may vary depending on microwave)

Pour over rice:

1/4 cup of soy sauce
1/4 cup of olive oil
Juice of 1/2 lemon
Crush garlic

Add:

2 spring onions
1/4 cup of sunflower seeds
1/4 cup of pumpkin seeds
1/4 cup of seasame seeds
1/4 cup of pinenuts
1/4 cup of cashew nuts }
1/4 cup of raisins/sultanas
Chopped parsley, chopped celery and peppers
*The salad is best made day before as it improves with keeping in fridge.

Dead Easy Brown Bread

*you don’t have to be into baking this is so easy and it is so nice you’ll never eat white bread again!! The easiest way to do this is to mix up a whole lot of flours and keep the big quantity in a container. Then every time you want to make a loaf you just have to measure out 250g of the mixed flours

For the mixed flours

800g wholemeal flour
500g wheat germ or wheat bran
600g white flour
Then when you want to make a loaf measure out 250g of this mixture per loaf.

Then for every loaf add:

1 teaspoon of bread soda and one tablespoon of honey
Then gradually mix in
60ml grapeseed oil (you’ll get this is any supermarket with the oils) and 330ml buttermilk  (Instead of buttermilk I’ve used slimline and it worked ok)

The mixture will be like a loose paste. Grease a bread tin and put in greasproof paper and grease this too. Pour in mixture and then spread sesame seeds on the top and cook at 180C for about 30-45 minutes. You’ll know it’s cooked by sticking a knife in the middle and when it is dry it is cooked.
This is lovely with jam or salads or soup.

Avocado Dip

Get a ripe avocado and mash it (or use a blender). Add half a lime. And you have a lovely avocado dip. Avocado’s are full of Essential Fatty Acids so they are supposed to be good for you and help break down the fat in your body. This is also really nice in a salad wrap or I use it on top of chilli tortilla’s  (see below). Make Salads more exiting and better for you with toasted seeds!!

Put a pan on the hob without any oil. Put in sunflower seeds and pumpkin seed (you can do sesame seeds too but as they are small they burn very easily so I find the others are better). Shake the pan around as they cook very quickly so don’t leave them. As soon as you see the sunflower seeds starting to brown take the pan off the heat. Spread over a salad and shake over some balsamic vinegar. This adds a lovely bite to the salad and again seeds are full of essential fatty acids so are good for you and help weight loss.
